“Beef short ribs are slowly braised with Bloody Mary mix and red wine in this savory dish. I
would normally use some garlic in this, but this recipe was developed for a good friend who is
allergic to garlic. I serve this with homemade spaetzle.”

Ingredients
* 4 pounds beef short ribs
* salt and pepper to taste
* 2 tablespoons olive oil
* 2 tablespoons butter
* 1 large onion, sliced into rings
* 2 leeks (white portion only), sliced
* 1 cup red wine
* 1 cup beef stock
* 1 (28 ounce) can diced tomatoes
* 3 cups bottled Bloody Mary mix
* 6 large carrots, peeled and cut into 3-inch pieces
* 20 small mushrooms, stems removed

Directions
1. Preheat an oven to 350 degrees F (175 degrees C). Season the short ribs with salt and
pepper, and set aside.
2. Heat an oven-proof Dutch oven, or wide, shallow pot with a lid over medium-high heat. Stir
in the olive oil and butter until the butter has melted. Stir in the onion, and cook until the onion
begins to soften, about 3 minutes. Add the leek, and continue cooking until the onion and leek
are lightly browned. Remove and set aside.
3. Brown the short ribs in the hot Dutch oven until browned on all sides, about 3 minutes per
side. Once browned, sprinkle the reserved onions over the ribs, pour in the wine, beef stock,
tomatoes, and Bloody Mary mix. Nestle the carrot chunks among the ribs. Bring to a simmer,
then cover, and place into the preheated oven.
4. Braise in the oven for 2 hours, then add the mushroom caps, recover, and continue cooking
1 hour more.

About This Recipe
“This is simple, home-style soup. I try to be specific because I know there are people just
starting out, so I ask a little patience for that! I love it if someone describes a technique for
the kitchen, it helps me too!” – KissaMew
Ingredients
1 (3 lb) broiler-fryer chickens
4 large potatoes, cut to bite size pieces
1 (16 ounce) bags baby carrots ( use half)
2 stalks celery, cut in 1/4-inch pieces
1 medium white onions, quartered
1/2-1 cup long grain white rice
2 -3 chicken bouillon cubes, crushed
1/2 tablespoon fresh coarse ground black pepper
2 dashes garlic powder, to taste
Directions
1. Rinse and clean whole chicken, taking out the giblets. You can cook these with the chicken
for flavor if you like.
2. Place your chicken into your Dutch oven or a large stock pot. A 6 quart size is good.
3. Fill the pot with water to cover the chicken, about 1/4 inch more over the chicken if you

4. Turn you burner on high with your stockpot centered and bring the water to a boil. Then
turn the heat down to a slow boil and add the onion, pepper and powdered garlic. This will
flavor you chicken.
5. Cook the chicken through, until a fork pierces the main part easily, do not cook it off the
bone or you’ll have chicken mush, not soup.
6. I set a very large Pyrex bowl in my sink, get out my largest stainless steel colander and
place it in the bowl, and pour the whole pot of broth and chicken into the colander. Be careful
about the steam so it doesn’t scald you!
7. Set the pot back on the stove (You did turn it off for now, right?).
8. Lift the colander out of the bowl, straining the juice through it. Set it on a large plate or
cutting board.
9. Carefully pour the broth from the bowl to the stock pot. Turn the heat back on and simmer
the broth. Add more water if necessary to bring the level up to about an inch from the rim of
you pot. Use less liquid if you want less soup.
10. Add potatoes, celery, carrots, rice and bouillon cubes to your broth at this point. Cover
and simmer at a slow boil to continue to cook.
11. On your cutting board: use a fork and knife to pull pieces from the cooked chick, leaving
the skin, fat and bones to discard. I don’t keep the onion from this either, it’s just to flavor the
soup. If you like, you can break the leg and thigh bones and add them to the broth so their
marrow can continue to flavour the soup. Discard these bones before serving.
12. Cut the chicken meat to sizes you like.
13. Check your vegetables, if they are almost cooked, add your chicken back into the
stockpot. Taste your broth and add seasonings and salt to taste. I have people who are
sensitive to salt, so I don’t cook with it often, but it’s on my table.
14. Finish simmering until vegetables are done. Turn off the heat.
15. If you are making biscuits, leave the cover on and bake your biscuits now, while the soup
“sets”. If your family is like mine, this gives you a good excuse for a “breather” while your
biscuits bake, and it sound so “secret recipe-ish”.

A comparison of an Enameled Cast Iron Dutch Oven (such as the Le Creuset) and a
Bare Cast Iron Dutch Oven
In doing research on the Le Creuset Dutch Oven, I found that there is a difference in opinion,
sometimes heated (no pun intended), of whether enameled cast iron or bare cast iron dutch
ovens are better to cook with. The difference between the two is that enameled dutch oven is
made of cast iron that has been coated with enamel whereas the bare cast iron has no
coating. Each has their strengths and weaknesses. Listed below are the pros and cons for
each.
Enameled Cast Iron Pros
Enameled does not react to cooking acidic foods such as tomato based sauces, chili or
stews. Other acidic foods include wine and vinegar which are used in many recipes.

The enameled cast iron dutch oven does not have to be “seasoned”, it is already
non-stick. See Cast Iron Cons.
Enameled is easier to clean.
Enameled is more attractive. – This one is purely subjective, but I think many would
agree. The look of black cast iron does have its place in a rustic themed kitchen though.

Enameled Cast Iron Cons
Metal utensils can scratch or chip enamel. Wooden or silicone tipped works best.
An enameled cast iron dutch oven does not have that cooking-in-the-wilderness look to
it, though some may consider this a pro.
Bare Cast Iron Pros
Bare cast iron can produce a better sear on meats.
Bare cast iron is preferred when cooking over an open flame or when placed directly on
hot coals.

Bare Cast Iron Cons
Bare cast iron needs to be seasoned before use. This involves coating the cooking
surface with oil and backing it in. This should be done multiple times before using it to
cook so that food does not stick.
Acidic foods will react with the cast iron causing it to break down over time (not to
mention adding iron, and some say a metallic taste, to your food).
New, bare cast iron cookware comes from the manufacturer with a wax or shellac
coating that needs to be scrubbed off before the first use.
Bare cast iron is not as pretty as enameled. Again, purely subjective.

For me personally, it comes down to the ease of use of the enameled cast iron dutch oven
(no seasoning necessary and easy to clean) as well as being able to cook with acidic foods
such as my great grandmother’s tomato sauce that simmers for hours. It also doesn’t hurt
that the enamel comes in an array of attractive colors.

Which is the best size Le Creuset Dutch Oven?
In researching the Le Creuset Dutch Oven, I have found a common question asked by people
before making their purchase. If you could only buy one, which size and shape is best?
Each size and shape has their advantages and disadvantages, so to best answer this
question you must first determine what you will be cooking most often and for how many
people.
Let’s start with shape since it is the most straight forward to answer. Le Creuset makes their
Dutch oven in two basic shapes, round and oval. They do make other designs such as heart
shaped, but the most common uses call for either round or oval.
Round – pros and cons
Most commonly used for making stews, soups and sauces.
Round shape matches best with most stove top burners.
Might not fit all cuts of meat for roasting or braising.
Oval – pros and cons
A better fit for for whole chickens, pot roasts, lamb shanks, etc. The longer shape can
accommodate more meats or long vegetables such as uncut celery or carrots.
Most often used for making no-knead bread.
The longer shape may cause the sides to overhang round burners, which could lead to
uneven heat distribution. This would cause the outer edges to not get as hot as the
middle.

The correct size, measured in liquid volume, is mostly determined by the quantity of food you
typically cook. A simpler way to look at this is to determine how may people you usually
cooking for and if you want left overs. The round dutch ovens range in size from 2 quarts (qt)
to 13.25 qt and the oval range in size from 3.25 qt to 9.5 qt. The table below is aligned to
show the comparable sizes between the round and oval.

Conclusion
In reading how people use their Le Creuset Dutch Ovens and what sizes they use I have
found that there is a pretty even split between the 5 and 7 qt sizes, but ti appears that that
more people prefer the oval shape. When explaining their choice in oval, they mention the
versatility of the size. Oval best fits larger meats and can also be used or stews, soups and
sauces, even though the round is more common for this purpose. If you can only have one,
cooking soup in an oval dutch oven works just fine.
I’d like to add one other piece of advice. Consider the weight of the different sizes. According
to Amazon, the Le Creuset Dutch Oven weights are as follows: the 5.5 qt weighs roughly
10.5 pounds, the 7.25 qt weighs 12.5 pounds and the 9 qt weighs 15.5 pounds.
